Balsamic, Mushroom & Garlic Chicken


This is a healthy and very tasty way to cook chicken breast tenders. My family and I really enjoy chicken cooked this way. It is so tender and flavorful. Add in the fact it is healthy, which makes it a winning combination!


4-Organic, GMO Free Chicken Breast Tenders (You can use regular chicken breast, but you will need to cut them into smaller pieces and pound them with a mallot to tenderize them.)

1-8ox tub of Organic Mushrooms (slived)

1/4 C. Flour (I use a gluten free flour blend)

2 T. Avocado or Olive Oil

6 Cloves Garlic (peeled and left whole)

1/4 C. Balsamic Vinegar

3/4 C. Organic Chicken Broth

1 Bay Leaf

1/4 tsp. Dried Thyme

1 T. Butter

Salt and Pepper to taste


1. Season the chicken with salt and pepper, both sides. Season the flour with salt and pepper. Mix the flour. Then dredge the chicken in the flour mixture. Heat oil in a large skillet over med-high heat and saute the chicken until it is nicely browned on one side. About 3 minutes.


2. Add the whole garlic cloves. Turn the chicken pieces and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover and simmer over med-low heat for 10 minutes, turning occasionally.


3. Transfer the chicken pieces to a warm plate and cover. Set aside. Continue simmering the sauce, uncovered, over med-high heat for about 5 minutes or so. Swirl in the butter and discard the bay leaf. Spoon sauce mixture over the chicken. Enjoy!


Notes:

*I always double the recipe, to ensure we have leftovers.

*Remember that it is important to use quality, organic, clean ingredients.

*If you are gluten free, just make sure to check that all your ingredients used are gluten free. *I also make mine dairy free by using vegan butter.
